Released under the name Nenia White-Fish Cakes, the lineup includes three products:

Nenia White-Fish Fish Cakes are made by processing freshly caught pollock into fish paste directly on board the fishing vessel, maximizing freshness.
With a high fish paste content, the taste is clean and free of fishy odors.
Premium Fish Cakes Fried in Expeller-Pressed Canola Oil
One standout feature of Nenia fish cakes is the oil used for frying.
High-quality Nenia expeller-pressed canola oil is used.
The square fish cake and hot bar are fried in canola oil, giving them a rich, nutty aroma and flavor.
The grilled fish cake is slowly rolled and cooked over an open flame. Because it is not fried, it has a lighter, cleaner taste.

Deep Flavor Without Chemical Additives
No chemical synthetic additives are used.
Instead, Nenia’s naturally brewed soy sauce and its Premium All-Purpose Oyster Sauce are added to create deep flavor.
To achieve a chewy texture, Nenia White-Fish Fish Cakes do not use phosphates or tapioca starch.
Pollock has a naturally high gel strength, resulting in a firm and elastic texture.

Q. Imported fish paste is generally considered to require additives like sorbitol and sodium polyphosphate. Is it really possible to omit them when using pollock paste?
A. Sorbitol and sodium phosphate are additives that act as humectants and softening agents. Nenia White-Fish Fish Cakes do not use chemical synthetic additives. Instead of sorbitol, which functions as a softener, we use a natural ingredient—fructo-oligosaccharides.
Fructo-oligosaccharides have weaker moisture-retention properties, so during the manufacturing process the fish paste tends to crumble easily. This lowers productivity and requires much more manual intervention. Nevertheless, even at the cost of time and expense, Nenia chooses to produce fish cakes without chemical synthetic additives.
